You might think I'm crazy.

I assure you I'm not...well, not completely.
I just enjoy new adventures in flavour country.
This afternoon I made lime pork dumplings for a dinner party this weekend. I had about a 1/3 cup if filling left. its really not enough to do much with. Of course i did what any canadian would do.....Poutine!

I wondered: What kind of gravy for such an exotic mix of meat and Herbs.
Then it occurred to me: what do you serve with dumplings?
Peanut sauce...bingo!
Add St. Albert's mild cheddar and you've got the newest poutine sensation... Omg you won't regret it. So good.

🍴Here's whatchoo need🍴

Ground pork
Lime zest and juice
Cilantro
Grated Ginger
Grated garlic
Chilli flakes
Salt & pepper

Grated cheese

Sauce:
Peanut butter
Lime juice
Coconut milk

Use fresh cut or frozen fries..

ENJOY!!

Legendary

I have no words for what happened to my boyfriend & I yesterday.

Ok we'll two words...The Boss

3.5 hours of pure legend. Songs running the gamut from rare requests (queen of the supermarket) to old faithfuls (glory days, badlands, thunder road....)
His interaction with the crowd was inspiring and genuine. Bringing kids on stage and dancing with a birthday girl was honest and sweet.
A lot of young rockers could stand to take notes from this.
The spirit of Clarence was certainly obvious in his brilliant nephew jake.
Little Steven looked positively bored most of the evening. When he came alive he brought the magic diet to life.

My favourite quote of the night that brought chills...
“The older you get the more ghosts and spirits walk alongside,” he said. “When you’re old, those ghosts beome your travelling companions. They remind me when they walk side me, of the preciousness of this day and how sweet life is.”

Thai coconut soup

Super Simple & fast. It's very versatile and you can add or subtract veggies & meat as you please.

Great for a busy Weeknight too.

Feeds 2- a good meal size.

This is my basic broth:

1 can coconut milk
1cupish Veg/chicken stock (or water)
Lime juice (to taste)
1 tsp Minced Lemongrass (I buy the stuff in the tubes, you can find them at most large grocery stores)
2 cloves, Sliced garlic
1/2 tsp Yellow curry paste
Fresh thai basil, mint, cilantro,
*if you're lucky to have an asian market close by, you can use kaffir lime leaves....they're such a wonderful aromatic addition and worth seeking out.
Fish sauce
Salt and Pepper
Sirracha hot sauce or chili garlic paste

Simmer all Ingredients for about 8mins. Taste and then adjust seasonings to your liking. I like mine a bit sweet, hot and sour so I added a bit of honey.
I poached shrimp in the broth half way thru so they weren't overcooked.

Garnishes:
Raw Peeled & deveined shrimp
Shredded chicken
Sliced Mushrooms
Julienned Red/green/yellow peppers
Sliced scallions
Sugar snap peas
Slivered carrots
Bean Sprouts
Crispy shallots

Noodles:
You can use ramen noodles, rice noodles. You could even use angel hair or spaghetti .
I used fresh Cantonese style noodles ($1.49 @ your independent grocers)

I Usually throw all the veggies in raw like a Phô style. But you can always sauté the veggies with the broth go give it more flavour.
Keep in mind, this is a super mild soup & it can be dressed up or down depending on your mood.

Hope you enjoy!!
